Paola’s Piadina

Piadine are Italian flatbreads; sort of like a tortilla, and they make for a perfect snack. They contain milk or yoghurt, which makes for a light, fluffy texture. You'll often find them in the glass cabinets of roadside coffee spots, and those can be a little stale but Paola's homemade ones are soft and light, and so good that'll probably end up eating quite a few.

Make the dough: Add the flour, dried yeast and salt to a large bowl. Add the yoghurt and softened lard, then begin mixing.

Paola uses milk instead of water.

Stack the cooked piadine under a clean tea towel to keep them soft and warm. Serve immediately, filled with your favourite savoury ingredients.
