Linda’s Insalata di Riso

This is something my mum always makes as soon as temperature start rising in the summer. It's a quick and easy lunch. And since there are always leftovers, I sometimes eat it as a snack too! It is also a great beach food you can prep ahead, because it's all pre-cooked and not too wet, it won't spoil too easily. Best to keep it in the shade though!

Turn cooking mode on

Step 1

Cook the rice in salted boiling water until al dente. Drain and spread it on a tray to cool quickly and stop the cooking. Drizzle with a little olive oil to keep it from sticking.
