Floriana's Fried Calendula Flowers

Mariella and Floriana have been close friends for many years. Floriana has a beautiful vegetable garden and grows an abundance of calendulas, one of her favourite flowers. The fact most people don't know, is that you can eat them. Not everyone will have these growing in their garden, but you can substitute for zucchini flowers, or other flowers, or fresh herbs will work nicely, really the joy is in the crunchy batter, and the right seasoning!

Step 1

Prepare the flowers. Gently inspect the calendula flowers for any insects and shake them clean. If necessary, rinse them very briefly in cold water and pat them completely dry with paper towels.
