The book Sugeli e Bugaeli book preserves the traditional cooking of the Upper Argentina Valley, especially the region’s distinctive cucina bianca (“white cuisine”) heritage.

Mix the flour and salt. Add water and olive oil and knead until smooth. Cover and let rest for 20–30 minutes.

Notes

Spinach can substitute for borage leaves; mixed wild greens or spinach can replace 'scarzöi', chard will also work well. Just make sure you remove excess moisture.
