Livia’s Risotto with Red Wine and Radicchio

My dad loved to cook, and he used to make this delicious risotto. I’m a big fan of radicchio and use it almost every day in various recipes, especially when it’s fresh in the winter. I also enjoy drinking red wine, particularly Sangiovese, since I’m from Romagna! To make a great risotto with radicchio, you need a glass of good red wine and some time, since the rice can take up to 15 minutes to cook. I like to sip on a glass of Sangiovese while I cook the risotto—it’s a very relaxing experience!

For an even more delicate flavor, you can add a courgette (zucchini), along with a drizzle of extra virgin olive oil to the stock. Sull’onda means 'on the wave'; so the risotto should be creamy and slightly runny, not too dry.
