Pappardelle with Wild Boar Ragù

Grazia was a wonderful 78-year-old signora from Certaldo in the heart of Val d’Elsa. She was great with her hands; she worked her whole life as a seamstress. You can see that precision and patience in everything she does. One of her special dishes is a Tuscan classic: pappardelle with wild boar ragù. She's a social being, with many friends often popping over to play card, as well as always having the company of her sweet cat, Piccola.

Notes

Certaldo onions are traditional, but regular sweet onions work if unavailable. If wild boar is tough, blend part of the meat briefly in a mixer to improve texture. Pasta machine setting number 5 works perfectly for pappardelle.
