Concetta’s Almond Biscuits

Recently, we visited 82-year-old Concetta in Frigintini, Sicily and filmed her making cavatelli with chickpeas. And, while filming her pasta skills, she (and her daughter Marilena) showed us their almond biscuits recipe. They started making these sweet treats many years ago, and so many people loved them that they now run this as a business. They're fresh, delicious, and baked, just once a week which brings quite the local crowd too! We hope you enjoy them as much as we did.

The machine used to make the biscuits is called a Tre Spade, but these biscuits can also be made using a piping bag and a meat grinder or tomato press if you have one. Otherwise, a food processor or coffee grinder will also work but you might just need to do it in smaller batches.
